Honey-processed coffee involves removing the outer skin while leaving a layer of sticky, sugar-rich mucilage—similar to honey—on the beans during drying. Dried on raised beds in shaded conditions, these beans capture and preserve their natural sweetness for a bold, distinctive flavour.
